Roast vegetable and apricot couscous (v)

Heating instructions:

Microwave - Remove the plastic lid and add a splash of water to the couscous, then microwave on a medium high heat in two minute intervals, stirring in between, until piping hot all the way through.

Oven - Preheat the oven to 180c. Remove the plastic lid and add a splash of water to the couscous, then heat in the oven for 8 - 10 minutes until everything is piping hot all the way through.
